Bacon wrapped Thai Chicken bites
Bacon wrapped, oh...You've got my attention! Practically anything wrapped in bacon tastes, well...AMAZING! That is if your into that sort of thing. These little sweet n' spicy treats make an amazing appetizer or meal! I like to make them during football season and they would be perfect for Superbowl Sunday festivities! Plus, they are super easy to make!
375° || 25-30 Minutes
Bacon Wrapped Thai Chicken Bites
yields approx. 12-24 bites
2 Boneless, Skinless Chicken Breasts
1lb. Bacon (approx.)
2-3 Bell Peppers
Sweet Chili Sauce
First, preheat oven to 375°. Next, prepare the bell pepper by cutting into thin 2" strips. Followed up by slicing chicken breast first in half lengthwise. Once you've cut chicken lengthwise, cut each half into 3 long strips and cut in half if you desire smaller bites. Repeat with second breast. Now, lay a piece of bacon flat (if you've made smaller bites, cut bacon in half too). Place a strip of chicken atop the bacon and add some peppers to one end. Roll everything together in a nice, neat roll up and secure with a toothpick or two. Place roll ups side by side on a baking sheet and brush with sweet chili sauce. Cook on bottom rack for approx. 25-35 minutes. Half-way through, flip bites and brush with another generous coating of sweet chili sauce. I hope you enjoy these delicious snacks!
