Well, it certainly has been an exciting year filled with wonderful things! I cannot wait to see what 2013 has in store for us! I wanted to take a minute to share a few of my favorite posts from the last 7 months. -Cheers, Ruth-

365 Challenge

Jesus Calling

As always, Elsie has inspired me to try a 365 Project. I guess my challenge is a bit of a cheat since I have this handy book that happens to be a 365 day devotional. But, ya' know, I don't think I've ever done something for 365 consecutive days besides maybe use eat and use the restroom! Should be fun and inspiring. -Ruth-

DIY Christmas Gift wrapping

I have finally finished all of my Christmas Shopping and gift wrapping! This year, I decided to keep it super simple and clean. I purchased brown postal paper for the wrapping, and I used some brown paper I had on hand to design the tags and flags and finished it off with a hemp bow! I really like the way the wrapping turned out! You can download the flags and tags by clicking the link below. Merry Christmas! -Ruth-

This Week

Baked eggs and avocado // Sleeping Sophee
Texas Sunset // Lemons and Tea
Trout and Veggies // Steak and egg muffins
Spicy Chicken soup // Stuffed peppers

This week has been busy! This time of year happens to be the busiest season at work, go figure, and we are preparing for our annual Christmas trip to Chicago. And, atop of all the non-stop hustle and bustle, I'm trying to finish up last minute Christmas gifts, wrapping, housekeeping and meal prepping for the week!

On the other hand, my new Instagram account has morphed into documenting my paleo diet journey! I don't know how it happened!  Documenting my meals is fun. I enjoy it! Strange, I guess. But, I am loving the paleo lifestyle. I have lost over 10 lbs, I sleep soundly through the night, I don't get tired in the afternoon, I am able think more clearly and have crystal clear focus, my workouts have been way more effective, and suddenly I have a flat belly and no bloating. Needless to say, my body has changed so much! What's not to love about that! I hope to share more about this new lifestyle after the holidays! Happy weekend folks...-Ruth-

Grilled Chicken and Spinach

I'm not sure what to call this dish. It's grilled chicken, over a bed of sauteed spinach, topped with fire roasted tomatoes and mozzarella cheese. See what I mean, does this dish have a proper name? I'm not sure, but I was impressed with the results.  I served this main dish with grilled onions and zucchini. It was not only delicious, but quite filling.
Grilled Chicken and Spinach  Ingredients: 2 Chicken breast // 1 large tomato // 1 bag baby spinach // 1 small onion // 1 medium zucchini // 1 lemon // Olive oil // 1/4 cup fresh mozzarella //Favorite (italian-ish) seasoning.  First, prepare chicken breast by trimming, rinsing, and patting dry. Season both sides with salt, pepper, and Rosemary Garlic Seasoning mix.  Place in a dish, coat with a few tbsp. of olive oil and the juice of 1 lemon. Let chicken marinade for 30-60 minutes.
While I waited, I prepared my onions, tomatoes, and zucchini by slicing and placing on a skewer. I also coated them with a bit of olive oil, salt, pepper, and basil. After that, I dropped my spinach in a skillet with a bit of water for steaming. My husband grilled the Chicken breast until it was no longer pink, and the vegetables went along for the ride. In the mean-time that spinach was a sautee-in'. Once complete, I assembled the Chicken stacks, topped with mozzarella and broiled for an additional 5 minutes. -Ruth-

Places and Spaces; The Heard

About a month ago, when it was still really HOT outside, Mark and I visited The Heard. It's a natural science museum and wildlife sanctuary. We hiked a few of the trails and had a very nice afternoon. My favorite part was the the wildflowers and the Lemur. Afterwards, we enjoyed a old fashioned Burger // fries // and a shake in downtown Mckinney. -Ruth-

These little guys are just too cute! Where I grew up, this was not something you saw everyday...or ever. So, it's kind of neat to see these little guys living in and around our home! -Ruth-

Jewelry Smithing

bracelet
forgded
broach

Today, I wanted to share with you a few handmade pieces I made in college. I had to fulfill a certain type of credit, and well a small metals class did just so. Since I had 10 years of experience in a dental lab, I figured it would be a fun challenge. Little did I know I would fall in love with jewelry smithing! A lot of the tools were very similar to dental tools, and on the same scale! Turns out, I'm a natural!

There is a lot of jewelry out there these days, especially on sites like Etsy. While, I do indeed think much of it is beautiful, I don't feel that it is unique. The majority of it is pre-made pieces that are purchased and assembled. There is just something so special about manipulating your materials, using a torch, soldering, and  coming up with unique textures.

I've been struggling with the idea of opening a shop and making these handmade metal pieces from scratch. Problem being ,they take quite some time to design, create, and assemble. They would really have to retail for a bit higher than the majority of the stuff on the market. I've considered stay local and working craft shows and local boutiques to see how this type of thing would sell. I am not sure the fate of an Isn't that Sew shop, but I know I'd sure like to give it a try!

While your at it, have a look at my professors site, she makes the most beautiful tea pots I've ever seen!

December

I just love this little girl, Sophee. I'm so glad she found us 1 1/2 years ago, and I can't imagine my days without her! On the other hand, folks. It's December and the Holiday season is officially upon us. I can't complain too much because it's 80 degrees on December 1st! Well, maybe I can whine a little bit about this 90% humidity...I've grown to love the moderate to low humidity levels here in North Texas. Things don't mold!  But, now I'm just rambling on about the weather.. and, uh mold....So, Happy December 1st and enjoy your weekend! -Ruth-
